Easy Coconut Ice-Cream (Dairy Free)

There’s something magical about a spoonful of ice cream, the kind that melts slowly and feels like a hug from the inside out. But let’s be real: most dairy-free options on store shelves are filled with gums, artificial sweeteners, and unpronounceable ingredients that make you feel less than nourished.

You’ll find a lot of dairy-free ice cream at the store now. There is a large demand for plant-based desserts but in my opinion, they are always way too sweet and never worth my money. That’s why I created this simple, creamy, dairy-free coconut ice cream — made with real ingredients, blended right in your kitchen, and so delicious you’ll want to eat the whole tub (without the guilt 😉).

Dairy-free ice cream is no longer a trend, it’s a lifestyle choice for many of us who care about gut health, inflammation, and balanced living. But “dairy-free” doesn’t always mean healthy.

Most store-bought brands rely on processed stabilizers, seed oils, and refined sugars to mimic the creamy texture of real ice cream. I wanted something better, a dessert that still feels indulgent, but made with ingredients that nourish your body and soul.

Plus… I love coconut. It’s rich, naturally sweet, and packed with healthy fats that help keep hormones balanced and energy stable. This recipe is my go-to when I’m craving something cold, comforting, and wholesome.

Lets get to the good stuff….


Ingredients:

  • 2 cans of coconut

  • 1/2 cup Coconut Milk (no fat milk)

  • 1 tsp vanilla extract

  • 1 tbsp of Cinnamon

  • Pinch of salt

  • 1/4 cup maple syrup

Optional Add-ins: Poppy seeds, dark chocolate chunks, cherries, or chopped nuts.






Directions:

Blend all your ingredients in a blender until smooth.

  1. Pour into two ice cube trays and freeze overnight.

  2. Once frozen, blend the cubes again on low speed, slowly increasing until creamy.

  3. Mix in any extras by hand — like fruit or nuts.

  4. Freeze again in a container until firm, then scoop and enjoy!

Pro tip: I love mixing in poppy seeds for a subtle crunch and visual pop, but cherries and dark chocolate are equally dreamy.






💛 My Favorite Way to Enjoy It

I usually enjoy a scoop after dinner, topped with toasted coconut flakes or a drizzle of almond butter. Sometimes I’ll add frozen berries for a “coconut berry sundae” moment that feels luxurious and nourishing all at once.
